Add the almond milk, egg, mashed banana, vanilla and cinnamon to a bowl. Dip the bread into the mixture and make sure it is well coated on both sides.
Add 1 tsp coconut oil or ghee (depending on flavor preference) to a frying pan. Once the oil or ghee has melted, add both pieces of bread to the pan and cook for 3 minutes over medium heat on one side. Then flip and cook for another 2 – 3 minutes (until lightly browned). Transfer to a plate.
Caramelize the reserved half of the banana by adding 1 tsp of coconut oil to a pan and chopping banana into small pieces and lightly frying them in the coconut oil. Sprinkle cinnamon on the caramelized bananas. Top the french toast with the caramelized bananas and optionally drizzle with some maple syrup. Enjoy!
