Chia seed pudding is one of the quickest, easiest and healthiest meals you can make! It takes about 5 – 10 minutes to whip up this dish and then you just place it in the refrigerator overnight, and voila, it is ready to go in the morning! Not only can you eat this chocolate version for breakfast, but the with decadent flavor it can substitute as a dessert or rich snack. This creamy and rich treat is loaded with healthy fat and protein, and will keep you full of energy for hours!

Ingredients
- 3 tbsp chia seeds
- ½ cup almond milk
- 1 tsp cacao (I like Cacao Magic) for 10% off use leahsplate10 at checkout
- 1 banana (half mashed and reserve half for topping)
- ¼ tsp cinnamon
- 1 tsp honey, maple syrup, or date syrup
Instructions
- Stir all ingredients in a bowl until fully combined. Place the mixture in an airtight container and allow to sit in the refrigerator overnight, or until the chia seeds have expanded and a pudding-like consistency is achieved (about one hour). Enjoy in the morning with any toppings of your liking. Suggested toppings are fresh berries, banana, goji berries, walnuts, pumpkin seeds, hemp seeds and cinnamon.
