Paleo Pecan Waffles with a Pecan Praline Sauce

For the waffles:

  • 2 eggs
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon
  • Pinch of salt
  • ¼ cup pecan halves
  • Coconut oil cooking spray

For the pecan praline sauce:

  • 1/2 cup coconut milk
  • 1/2 cup coconut cream
  • 1/2 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp pink sea salt
  • ¼ cup pecan halves

Instructions

To make the waffles:

  1. Mix the wet ingredients (eggs, maple syrup & vanilla extract) together in a large bowl.
  2. Mix the dry ingredients together in a bowl, then pour into the bowl with the wet ingredients, mixing until everything is well combined.
  3. Pour in the pecan halves and mix again.
  4. Heat a waffle maker and spray with coconut oil cooking spray.
  5. Add about 1/4 cup of batter onto the hot waffle maker and cook until browned, about 5 minutes, then top with the pecan praline sauce.

To make the pecan praline sauce:

  1. Place all ingredients except for the pecan halves in a small sauce pan over low heat, stirring to dissolve the coconut sugar.
  2. Once mixture is boiling, reduce to a simmer and simmer for 10 minutes, stirring occasionally.
  3. Pour the pecan halves into the sauce once it’s done cooking and mix again.
  4. Pour the sauce over the waffles, and pour the remaining sauce into a jar and keep refrigerated for up 5 days.
