I’d have to say my all-time favorite childhood dessert was a good old peanut butter cup. Who doesn’t love the taste of chocolate mixed with peanut butter?! Now I basically get to eat it for breakfast! This smoothie bowl is delicious, satisfying, flavorful, creamy and simply amazing!
This smoothie bowl can be enjoyed any time of day – it makes a delicious breakfast, snack or dessert. It’s super satisfying and keeps me full for hours thanks to the fat, fiber and protein in this bowl. It tastes like a decadent dessert, but is made from simple, whole food ingredients.
I’ve been trying to add good fat to all of my meals because it really helps to keep full and satisfied for a long time. Peanut butter is packed with good fat – that’s why I’ve been loving it in my smoothies. I’m also simply obsessed with the taste of peanut butter!
Since the star of this recipe is peanut butter I figured we can chat a bit about why my love for peanut butter is so huge. Peanut butter is a staple in my pantry and for good reason! It’s a versatile, affordable ingredient that can be added to meals and snacks for a tasty, nutritious boost. In a 2 tablespoon serving of peanut butter you get 8 grams of protein (amazing for my vegan friends), 2 grams of fiber and 12 grams of unsaturated fat.

Ingredients
- 1.5 cups unsweetened almond milk
- 2 tbsp peanut butter
- 1 tbsp chia seeds
- 1 tbsp cacao powder or 1 scoop chocolate protein powder
- 1/2 cup frozen cauliflower (I steam it before freezing it – makes it easier to digest)
Topping:
- 1 tbsp raw cacao nibs
- 1/2 tbsp peanut butter
Instructions
- Add all ingredients to a high-speed blender and blend until smooth and creamy.
- Pour into a bowl and top with cacao nibs and a drizzle of peanut butter
- Enjoy!
