Raspberry Chia Pudding
Chia seeds are an antioxidant-packed superfood that will provide you with sustainable energy and many nutrients such as fiber, protein, omega-3’s, calcium, magnesium, zinc and potassium.
I try to incorporate chia seeds into many of my meals by sprinkling them on my oatmeal, salads, smoothies, toast, etc. I have always enjoyed “chia pudding” as a healthy breakfast option or even a snack. Lately I have grown bored with the plain flavor of the chia pudding I find at health food restaurants, so I have created a flavorful variety that is packed with additional superfoods such as maca and raspberries.
Due to the high protein and fiber content, chia pudding leaves me feeling full and satisfied for hours. This is such an easy meal to make ahead of time and take on the go in the morning!
Raspberry Chia Pudding
- Prep Time: 10 minutes
Ingredients
- 3 tbsp chia seeds
- ½ cup almond milk
- ¼ cup raspberries
- 1 tsp maca powder
- 1 tsp maple syrup
Instructions
- Stir all ingredients in a bowl until fully combined. Place the mixture in an airtight container and allow to sit in the refrigerator overnight, or until the chia seeds have expanded and a pudding-like consistency is achieved (about one hour). Enjoy in the morning with any toppings of your liking. Suggested toppings are fresh berries, goji berries, walnuts, pumpkin seeds, hemp seeds and cinnamon.
