Gluten-Free Chocolate Chip Cookie Skillet

  • 1 1/4 cups almond meal
  • 1/4 cup dark chocolate chips
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon pink sea salt
  • 1/3 cup coconut sugar
  • 1 egg
  • 3 Tbsp coconut oil, melted
  • 1/2 tsp vanilla extract
  • Optional: vegan or regular organic ice cream for serving.


  1. Preheat oven to 375F.
  2. Combine the almond meal, baking powder, salt, coconut sugar and chocolate chips in a large mixing bowl.
  3. In a separate bowl, beat egg then stir in the coconut oil and vanilla extract.
  4. Add wet ingredients to the dry ingredients and mix until combined.
  5. Place the mixture on a lightly greased skillet and press down to flatten the mixture.
  6. Bake about 10 minutes, then remove from oven to cool.
  7. Serve with ice cream or coconut cream if dairy-free.
