Add the oats, cinnamon and almond milk to a jar, mixing well. Cover the jar and place in the refrigerator overnight.
In the morning pour the oatmeal mixture plus the apple and banana into a blender (I love my Blendtec) and blend on low/medium speed until it reaches a pudding-like consistency (about 30 seconds).
Pour the oatmeal pudding into a bowl and add desired toppings. I added some grain-free granola and a drizzle of almond butter.
