Hummus Cucumber Tomato Toast

Ingredients

Scale
  • 2 slices of bread (I love gluten-free sourdough)
  • 2 tbsp hummus (I use sprouted organic hummus)
  • 1/4 cucumber, thinly sliced
  • handful of cherry tomatoes, cut in half
  • microgreens
  • hemp seeds
  • pinch of pink sea salt & pepper
  • 2 tsp olive oil

Instructions

  1. Lightly toast the bread in your toaster oven
  2. Spread 1 tbsp of hummus over each piece of bread, followed by the cucumber, cherry tomato, micro greens, hemp seeds, pink salt, pepper and drizzle of olive oil.
  3. Enjoy!
