Ingredients

Salad:
Two handfuls mixed greens
1/4 cup
sliced cherry tomatoes
1/4
of a sliced cucumber
2 tbsp
chopped walnuts
Dressing:
1 tbsp
olive oil
1 tbsp
freshly squeezed lemon juice
1 tsp
dijon mustard
Pinch of pink salt & pepper

Instructions
Combine all the ingredients for the salad in a bowl.
Mix together the dressing ingredients and then pour over the salad.
Notes
To add protein to this salad you can add the following:
hemp seeds
chickpeas
grilled fish or chicken
