First make the crust by adding a bag of granola (I love this grain-free granola) with coconut oil. Process until it’s well combined. Next simply press the crust down into the bottom of a loaf pan.
Cover the crust with a pint of your favorite ice cream (make sure to let the ice cream defrost for a few minutes first). I am obsessed with Daily Harvest plant-based vegan ice cream. Once the ice cream is spread over the top of the crust simply cover it and place it in the freezer for a few hours prior to slicing and enjoying!
