Warm blueberry pie has always been one of my favorite desserts, and I’ve been especially craving it lately with it being summertime. Unfortunately, it’s made with processed carbs, tons of sugar and unhealthy fats (which obviously I’m not a fan of). My healthy blueberry baked oatmeal serves as the perfect substitution when I’m craving blueberry pie!

The slow-baked approach to oatmeal is ideal since the fruit caramelizes and helps breakfast disguise as a delicious dessert.  I also love to add a spoonful of peanut, almond or cashew butter on top for an even creamier, richer consistency – but feel free to add whatever you like!

The oatmeal is made with simple, healthy ingredients such as oats, cinnamon, vanilla, banana, blueberries, baking powder and almond milk. I suggest making a big batch on a Sunday and having leftovers for a quick and easy breakfast throughout the week.

Blueberry Pie Baked Oatmeal

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Lightly grease a small ramekin with coconut oil (or nonstick cooking spray)
  3. Add the oats, mashed banana, baking powder, vanilla extract, cinnamon, maple syrup and almond milk to a bowl. Stir well to combine.
  4. Mix the blueberries into the mixture.
  5. Pour the mixture into a small ramekin and top with more blueberries.
  6. Place in the oven and bake for approximately 25 – 30 minutes, until the top is golden.
  7. Remove from oven and allow to cool for 5 minutes.
  8. Top with a spoonful of nut butter (gives it a rich & creamy taste) and/or crumbled walnuts.


I didn’t add any maple syrup, as I found it to be sweet enough with the mashed banana and blueberries in the mixture. However, if you like it sweeter add maple syrup to your liking.
