The BEST shakshuka recipe ever!

Heat 1 tbsp olive oil in a large pan on medium heat. Add 1/2 of a diced onion & 1/2 of a chopped bell pepper & cook for 5 minutes.

Add 1 clove chopped garlic, 1 tsp paprika, 1/2 tsp cumin & 1/4 tsp chili powder, and cook for another minute, mixing well.

Pour in a can of diced tomatoes & 1 tbsp tomato paste into the pan. Season with salt and pepper and bring the sauce to a simmer.

Use a spoon to make wells in the sauce and crack 3 - 4 pasture raised eggs into each well (depending how many you have room for). Cook the eggs for 5 to 8 minutes, or until the eggs are done to your liking (I like mine runny). Turn down the heat to low and cover with a lid for the final minute.

Garnish with feta, chopped cilantro & parsley. Add some sliced avocado on top and serve with toasted bread of your choice (I love gluten-free sourdough).

4 Wellness Hacks I swear by:

1. Get your greens in! I love adding a scoop of @amazinggrass Greens Blend Superfood into a glass of water every day. I feel amazing because I’m getting 14 greens, fruits and veggies every day no matter what. I buy it on @amazon

2. Drink a glass of lemon water immediately after waking up. Water rehydrates you after a long night of sleep and the lemon helps to flush toxins out of your system and kickstart your digestive system.

3. Add epsom salts to your bath. Epsom salts contain magnesium, which helps to soothe sore muscles and naturally relaxes your body. Your body absorbs the magnesium, which also helps with insomnia and anxiety. I notice I have a more restorative night of sleep on the nights I take a bath with epsom salt.

4. Baking soda to clean produce. I love this hack! Even organic produce needs to be cleaned really well. I soak my produce in water mixed with baking soda for a few minutes. Make sure to rinse it well after.

These baked egg cups are the perfect breakfast to prep ahead of time and enjoy throughout the week (I love making these on a lazy Sunday morning & having leftovers for the week ahead). They’re packed with protein & are a great way to get your veggies in!

Recipe:

Preheat oven to 375 F.
Lightly grease a muffin tin with avocado oil spray
Scramble together 10 eggs + a pinch of salt & pepper
Chop 1 red bell pepper & 1/2 a yellow onion
Heat up a frying pan with 1 tsp of olive oil and add the bell pepper & onion & sauté for about 5 min.
Add in a large handful of spinach and sauté an additional minute.
Add the sautéed vegetables into the bowl with the eggs and add in 1/4 cup feta and 1 tbsp chopped parsley.
Add everything into the muffin tins using a 1/4 cup to scoop it.
Place in the oven and bake for 15 - 18 minutes. Remove from the oven and allow to cool a few minutes before eating.

Store the extra egg muffins in a glass airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.

This veggie-packed panini is the easiest lunch to make and took just over 5 minutes from start to finish!

First spread goat cheese over your choice of two slices of bread (I love a sprouted whole wheat bread or gluten-free bread). Next layer @lovebeets Perfectly Pickled Beets (I love that they come sliced & ready-to-eat), sliced cucumber, spinach, and avocado. Place the sandwich in a panini maker and cook for a few minutes until it’s a little crisp, then slice and enjoy!

This arugula parmesan salad is the most simple, delicious & *easiest* salad to make. I love serving it is an app, or having it as a side with my dinner.

All you’ll need is:

3 large handfuls arugula
1/2 cup freshly shaved parmesan cheese
Dressing: 2 tbsp olive oil, 3 tbsp balsamic vinegar, 1 tsp dijon mustard & pinch of sea salt & black pepper

Fruit: apples and bananas travel well and don’t need to be refrigerated. I eat these first though since they will spoil (or get smooshed 🤣) first

Dried fruit: my biggest tip is the ONLY ingredient should be fruit! No added sugar and no other ingredients. Brands I love @natierrasuperfoods @solelyfruit

Applesauce pouches: opt for ones with the only ingredient being apples! You don’t want added sugar or preservatives

Veggies: obviously fresh is best, but most need to be refrigerated, so I love @rhythmsuperfoods dried kale chips, carrot chips & beet chips. I also love dried seaweed from @gimmeseaweedd (tip: opt for avocado oil or olive oil, as I recommend against the ones with seed oil)

Nuts: same tip as the dried fruit - the only ingredient should be the nut and maybe a little salt. No added oils or sugar is key!

Protein: in addition to some nuts being a good source of protein, if you’re looking for more protein options I love @chomps @epicbar

Bars: minimal ingredients is best here. I like @larabar @simplemills @elementalsuperfood

Chips & crackers: some healthier options are @sietefoods @jacksonshonest_ @simplemills @ellasflats @marysgonecrackers @jilzcrackerz
