These nut-free tahini energy bites are a simple and delicious vegan & gluten-free snack that requires only 4 ingredients.
Ever since finding out the not-so-fun news that my daughter, Emma, has a nut allergy (she’s allergic to ALL nuts) I have been coming up with recipes for nut-free snacks. Energy bites have been a staple in my home for years as I love snacking on them in between meals when I’m hungry and they are so easy to grab-and-go. However, now that Emma can’t enjoy these snacks with me I created one that both her and I can enjoy. I always felt so bad when I’d be snacking on my energy bites (with nuts in them) and she would reach out to eat one and I’d have to say ‘no’. The poor thing doesn’t understand why she can’t have one and it always makes me feel terrible. I love these new nut-free bites that I recently made because not only are they delicious, but I’m also able to share them with Emma which makes me the happiest mama 🙂
These nut-free energy bites are made with simple, healthy ingredients: medjool dates, tahini, oats and coconut flakes. They are easy to make (simply add all ingredients to a food processor and then roll into little balls). These little bites don’t even require any baking! You place the balls in the refrigerator for a few minutes to harden and then they are ready to eat! I love making a big batch of these on Sunday’s to have for the week. I always throw a few into my bag so when hunger strikes when I’m out and about I have a healthy snack to reach for.
Another wonderful thing about these snacks is that they are school-friendly. Most schools don’t allow nuts due to the increasing rise in allergies, so I love that I’m able to bring these to my mommy and me class. I will also send Emma to school with these once she begins preschool (ahhh freaking out about that)!
One more thing I wanted to make note of: I originally made these nut-free so I could share them with Emma, but it also made me realize that I eat a TON of nuts/nut butter (nut butter in my smoothies, added into my oatmeal and yogurt, in my bars as well as eating lots of paleo bread which is made from nut flours). It’s kind of a nice change to have a nut-free snack 🙂

Nut-Free Tahini Energy Bites (Vegan & GF)
- Prep Time: 10 minutes
1 1/2 cups medjool dates, pitted
1/3 cup tahini
1/4 cup old fashioned rolled oats
1/4 cup unsweetened coconut flakes
- Place all ingredients into a food processor fitted with an “S” blade and process until they form a sticky batter.
- Roll the dough in your hands creating small balls then place them in the refrigerator for 20 minutes.
Store in an airtight container in the refrigerator for up to two weeks or freeze for up to six months.
