Raspberry Oat Crumble Bars (Gluten-Free & Dairy-Free)
These delicious raspberry oat crumble bars are perfect for any time of day and are gluten-free, dairy-free, and are free of refined sugar.
These raspberry oat crumble bars are the perfect healthy breakfast or snack. They’re free of refined sugar (lightly sweetened with just honey and maple syrup) and made with all natural and clean ingredients. These delicious bars are perfect for any time of day and are gluten-free and dairy-free. They’re made with a delicious homemade raspberry chia seed jam that is simple to make. These bars are perfect to grab-and-go for busy mornings. Not only can these bars be enjoyed for breakfast or a snack, but they’re also AMAZING warmed up and served with a scoop of yogurt or ice cream for dessert making them a healthy indulgence with clean ingredients without all the sugar!
The clean ingredients used to make the crust and crumble topping are simply oats, almonds, coconut oil, maple syrup, honey (use brown rice syrup if strict vegan), almond butter and pink sea salt. To make the homemade raspberry chia jam all you need to do is mash up some raspberries in a saucepan and stir in chia seeds, lemon juice and maple syrup. Within a few minutes, the chia seeds will absorb the fruit juices and thicken it to a jammy consistency. You can use any fruit – homemade strawberry chia jam is also so delicious! You can feel free to use a store-bought jam instead to save time.
I used One Degree Organics Organic Sprouted Rolled Oats for this recipe. I’m extremely picky about the oats that I use and I’m going to explain why I love and trust this brand (it’s actually the only brand that I buy oats from now). One Degree Organics sprout their oats which makes them easier to digest and also boasts more nutrients. The one and only ingredient is simply organic, sprouted, gluten-free, non-GMO oats. One Degree believes in the connection between healthy soils, healthy plants and healthy people, which aligns perfectly with my beliefs. All of their products are so clean and which is why they have quickly become one of my favorite companies to support. They also believe that consumers deserve 100% traceability in their food, so they created tracking technology that gives us the power to meet the farmers and producers behind every ingredient in their food—just like a farmers’ market which I think is so amazing! I truly believe that I’m consuming the healthiest and cleanest oats possible since I know where they come from, are certified organic, gluten-free and non-GMO. I also love that I don’t have to sprout them myself and they come already sprouted.

PrintRaspberry Oat Crumble Bars
- Prep Time: 30 minutes
- Cook Time: 25 minutes
Ingredients
Raspberry Chia Jam:
- 2 cups raspberries
- 3 tbsp chia seeds
- 1 tbsp lemon juice
- 1 tbsp maple syrup
Crust & Crumble Topping:
- 2.5 cups organic sprouted rolled oats
- 1 cup almonds
- 1/4 tsp pink sea salt
- 1/2 cup coconut oil
- 1/4 cup pure maple syrup
- 3 tbsp honey
- 1 tbsp almond butter
Instructions
Raspberry Chia Jam:
- First prepare the raspberry chia jam by cooking the raspberries in a saucepan over medium heat for about 5 – 10 minutes, mashing with a fork or potato masher.
- Remove from heat and stir in the lemon juice, maple syrup and chia seeds.
- Allow the jam to cool and then transfer it to a jar and place in the fridge. The jam will thicken and set once completely chilled.
Crust & Crumble Topping:
- Preheat the oven to 350 degrees F.
- Line a 9-inch square pan with parchment paper.
- In a food processor, combine the oats, almonds and salt and process until you have a coarse flour.
- In a small pot, melt the coconut oil over low heat. Remove from the heat and whisk in the maple syrup, honey and almond butter until combined. Pour the wet mixture on top of the oat mixture in the food processor and process until the mixture comes together, about 15 more seconds.
- Set aside 1 cup of the oat mixture for the topping. Crumble the remaining oat mixture over the base of the prepared pan in an even layer. Starting at the center, push down with your fingers to spread out and pack down the crust. Press the dough down tightly. Even out the edges with your fingertips.
- Place the crust in the oven and bake for 10 minutes. Remove from the oven and let cool for 10 minutes. Spread the jam evenly over the crust. If you have some leftover jam place it in the fridge to enjoy later. Crumble the remaining 1 cup oat mixture evenly over the jam.
- Bake uncovered, for 15 more minutes. Remove from the oven and allow it to cool in the pan on a baking rack for at least an hour, then transfer the pan to the freezer for 30 minutes until completely cool. Slice into squares and enjoy!
- Leftovers can be stored in an airtight container in the fridge for up to a week, or wrapped up and stored in the freezer for a few months.
