This is the most delicious collision of s’mores and banana bread! If you love s’mores and you love banana bread then this one is for you! The mixture of gooey marshmallows with melted chocolate and bananas is just too good to be true. This dessert is perfect for any time of year!
This recipe is easy to make and is grain-free and gluten-free thanks to the almond flour. It it naturally sweetened with coconut sugar (except for the chocolate and marshmallows). Just wait for how good your house will smell when this comes out of the oven!

Ingredients
- 2 pasture-raised eggs
- 1/4 cup melted & cooled coconut oil (or avocado oil)
- 1/2 cup creamy cashew butter or almond butter
- 1 cup mashed banana (I used 3 medium-sized bananas – make sure they’re spotty!)
- 1 tsp vanilla extract
- 1/2 cup coconut sugar
- 3 cups blanched almond flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 cup chocolate chips
- 1 cup mini marshmallows
Instructions
- Preheat oven to 350F and lightly grease a 9 inch cast iron skillet or 9 inch square baking dish.
- In large bowl combine the eggs, coconut oil, almond butter (or cashew butter), mashed bananas, vanilla extract and coconut sugar and mix really well until smooth.
- Add in the almond flour, baking soda, cinnamon and salt and mix again.
- Stir in the chocolate chips, reserving a few for sprinkling on top.
- Pour 1/2 of the batter into the greased skillet or dish and spread evenly across the bottom. Scatter 1/2 of the marshmallows over the batter, and then spread the remaining batter over the marshmallows. Sprinkle the remaining chocolate chips and marshmallows over the top.
- Place in the oven and bake for 25 – 30 minutes.
- Allow to cool for at least 30 minutes prior to slicing and serving. Enjoy!
