The holidays are all about comfort food and what screams comfort food more than banana pancakes?! I’m a sucker for pancakes – especially ones that taste like banana bread! During the holiday season (and especially the winter months) I crave comfort food and pancakes are probably one of my favorite comfort foods. During the summer months I have a cold smoothie almost every morning (and still do during the cooler months – just not quite as often). However, I definitely crave warm breakfasts this time of the year and there’s nothing like a freshly cooked, hot plate of delicious pancakes in December. The holiday season is also about ‘gathering’ and spending time with family. Ingredients

Pancakes

  • 3 bananas, mashed
  • 3 tbsp coconut flour
  • 3 eggs

Toppings (optional):

  • blueberries
  • walnuts

Instructions

  1. Mash banana. Add coconut flour and egg and stir until a smooth batter forms.
  2. Cook pancakes on medium heat.
  3. Serve with toppings if desired.
