I have oatmeal for breakfast at least a few mornings a week and it never gets old. I’m obsessed with overnight oatmeal, baked oatmeal and traditional oatmeal cooked over the stovetop. I thought it would be fun to experiment with a different version of oatmeal just to switch it up. I created this no-cook apple banana oatmeal pudding and it’s one of my new favorite healthy breakfasts! I’ve been sharing it with Emma and she’s just as into it as I am! I found this oatmeal pudding to be so satisfying and it kept me full until lunchtime.

Not only is this oatmeal pudding delicious, but I also love how healthy the recipe is. This oatmeal pudding is vegan and gluten-free (if you buy certified gluten-free oats). This recipe is naturally sweetened with the apple and banana. I found it to be sweet enough with just the fruit, but if you opt for a sweeter oatmeal feel free to add 1 tbsp of maple syrup.

This apple banana oatmeal pudding is so simple to make and requires very minimal/simple ingredients: oats, cinnamon, almond milk (you can use any milk), apple and banana – that’s it! You can add any superfoods you like such as maca powder or for some protein you can add a scoop of protein powder. However, I wanted to keep the ingredients for this recipe really simple for those of you who don’t have any superfoods or protein powder at home. I felt like most people had some oats, cinnamon, milk, apple and banana at their house 🙂

To make oatmeal into a pudding-like consistency you simply soak the oats and cinnamon in almond milk overnight (this softens the oats plus makes them easier to digest) and in the morning add the oatmeal mixture plus half of an apple and half of a banana into a blender and blend it until it reaches a pudding-like consistency. There is no cooking required, which makes this recipe so easy! I then pour the oatmeal pudding into a bowl and it can be enjoyed with no toppings at all, or I like to add some grain-free granola and a drizzle of nut butter on top. You could also add some fresh fruit on top.

You can use any blender when blending the oatmeal with the apple and banana, but I wanted to make mention of my new blender that is my current obsession! Ingredients

1/2 cup oats (certified gluten-free if necessary)

1/4 tsp cinnamon

2/3 cup almond milk

1/2 banana

1/2 apple

Instructions

  1. Add the oats, cinnamon and almond milk to a jar, mixing well. Cover the jar and place in the refrigerator overnight.
  2. In the morning pour the oatmeal mixture plus the apple and banana into a blender (I love my Blendtec) and blend on low/medium speed until it reaches a pudding-like consistency (about 30 seconds).
  3. Pour the oatmeal pudding into a bowl and add desired toppings. I added some grain-free granola and a drizzle of almond butter.
