Apple Pie Baked Oatmeal (Vegan & Gluten-Free)

With fall upon us I’m already dreaming of all the yummy apple recipes I’m going to make. I couldn’t quite wait for the season to begin before creating my first cozy Autumn-inspired apple recipe. Apple pie baked oatmeal…. oh where do I even begin?! This is one of my favorite healthy breakfast recipes that’s easy to make, requires minimal ingredients, is free of refined sugar and packed with nutrients. This hearty breakfast will keeps me full and satisfied for hours! I literally feel like I’m eating a delicious dessert for breakfast!
This recipe is vegan and gluten-free (if using certified gluten-free oats). The simple ingredients used are: oats, cinnamon, flax, almond milk, vanilla extract, baking powder, banana and dried apples. The recipe is naturally sweetened by the banana and apple and definitely doesn’t require any added sugar or syrup!
If this recipe doesn’t sound delicious enough, it’s then topped off with gently dried organic apple. I mixed some of them into the oatmeal as well as leaving some as a topping. This adds the perfect natural sweetness to this recipe.
If you don’t have time to enjoy this apple pie baked oatmeal at home, you could bring this meal in tupperware to work or school and enjoy it for a healthy morning breakfast!
I know this breakfast will be on repeat ALLLL through the fall season – it’s delicious and gives me all the cozy vibes! Apple Pie Baked Oatmeal
- Prep Time: 5 minutes
- Cook Time: 30 minutes
- 1/2 cup old fashioned oats (gluten-free if necessary)
- 1 tsp ground flax (optional)
- 1/4 tsp cinnamon
- 1/4 tsp baking powder
- 1/2 tsp vanilla extract
- 1/2 mashed banana
- 2/3 cup almond milk
- 1/4 cup Peeled Snacks Gently Dried Organic Apple
- Preheat oven to 350F.
- Lightly grease a small ramekin with coconut oil
- Add all ingredients to a small bowl and mix well.
- Pour into the ramekin, add some dried apple slices on top, and place in the oven for 30 minutes.
- Remove from oven and allow to cool for a few minutes and then enjoy!
