Blueberry Cauliflower Acai Bowl
Adding cauliflower to your acai bowl will make it extra thick & creamy, plus it’s the perfect way to sneak in some extra nutrients!
Acai has been one of my favorite superfoods for years. It contains powerful antioxidants and healthy omegas. My favorite way to consume acai is to blend it with some other simple ingredients to create a refreshing and revitalizing smoothie. I usually pour it into a bowl and eat it with a spoon since I prefer my smoothies on the thicker side. I’ve been making ‘classic’ acai bowls for years, but decided to add some cauliflower into my usual blend to add some extra nutrients. I prefer to use frozen cauliflower, which makes the consistency of the smoothie really thick and creamy. I steam the cauliflower prior to freezing it because this makes it easier to digest. However, steaming the cauliflower is not necessary, just a personal preference. Another reason I love adding cauliflower to my acai bowl is because I realized I was eating all fruit and no veggies when I was enjoying this breakfast. Now I can feel good knowing that I’m also getting hefty dose of one of the healthiest vegetables around! Cauliflower is high in Vitamin C, Vitamin B6, Vitamin K, iron, calcium and Folate.
This recipe is completely vegan, paleo and free of gluten and refined sugar. The recipe calls for simple ingredients such as almond milk, acai, blueberries (also very high in antioxidants) and banana which make the smoothie perfectly sweet, but not overly sweet. Just like the cauliflower, the banana really helps to thicken the smoothie and make it extra creamy! I also added a spoonful of nut butter for some healthy fat and protein. I love the slightly ‘nutty’ taste that adding a little almond butter attributes to this bowl.
My acai of choice is by Sambazon, which you can usually find in the freezer section of your grocery store. Sambazon uses organic and non-GMO acai sourced in the Brazilian Amazon. I choose to use the Sambazon pure unsweetened packs since they’re made with only 100% pure acai with no nothing added to sweeten it and has zero grams of sugar. Since the acai is naturally sugar-free the smoothie is only sweetened by the blueberries and banana.

Ingredients
- 2 cups almond milk
- 2 tbsp almond butter
- 2 Sambazon unsweetened acai packets
- 1/2 cup frozen blueberries
- 1/2 cup steamed then frozen cauliflower
- 2 frozen bananas
Instructions
- Add all ingredients into a high-speed blender and blend until smooth and creamy.
- Divide between two bowls and enjoy immediately!
