Blueberry-Flax Smoothie (Vegan & GF)
This creamy and nutritious blueberry flax smoothie is easy to make, requiring just 7 wholesome ingredients and takes only 5 minutes to make.
Even though it’s winter I can’t get enough of smoothies lately. Since I live in South Florida I don’t crave warm breakfast in the winter as others often do. I was stuck on a green smoothie kick for a few weeks and have now made the transition to this beautiful blueberry smoothie. It’s the perfect plant-based breakfast or snack that is thick & creamy, gorgeous, naturally sweet, nutritious, quick & easy, portable, fiber-rich, satisfying and SO delicious!
This smoothie requires only 7 wholesome ingredients that are rich in healthy fat, antioxidants, fiber and protein. This smoothie is also packed with vegetables and you can’t even taste them! The simple ingredients are almond milk, blueberries, banana, cauliflower, cucumber, flax seeds and almond butter. For a gorgeous dark blue-purple hue and dose of antioxidants, I added in frozen blueberries. I also used 1/2 of a frozen banana and frozen cauliflower because frozen fruit and vegetables make the creamiest, thickest smoothies. Adding in the cauliflower not only makes the smoothie thick and creamy, but also adds a full serving of one of the healthiest vegetables on this planet. There’s also some cucumber in the smoothie for even more veggies! The best part about this smoothie is you can’t even taste the vegetables! The banana and blueberry naturally sweeten the smoothie (also making it creamy) so there’s no need for any sweetener. The almond butter adds a nice dose of healthy fat and protein and the flax seeds are the perfect serving of fiber. For even more protein, feel free to add hemp seeds or vegan protein powder. I sprinkled some hemp seeds and extra almond butter on top, but that’s totally optional.

Ingredients
- 1 cup almond milk
- 1 tbsp ground flax
- 1 tbsp almond butter
- 1/4 cucumber
- 1/2 frozen banana
- 1/2 cup frozen blueberries
- 1/2 cup steamed the frozen cauliflower
Instructions
- Add all ingredients to your NutriBullet Balance nutrient extractor (or you can use a high-speed blender) and blend until smooth and creamy.
- Pour into a glass and optionally add some blueberries, hemp seeds and almond butter on top.
