Caramelized Banana Whole Wheat Challah French Toast

I was SO excited when I found WHOLE WHEAT challah at Whole Foods! I knew at that moment that I’d have to make something special with it. Challah french toast was the obvious answer.
I added mashed banana into the mixture that I dipped the bread in and it created the most amazing flavor! Adding some caramelized banana on top was the icing on the cake 🙂
This is definitely going to become a Sunday morning staple in my home! Trust me, make it for your dad or husband for Father’s Day – they will love you forever 🙂

Ingredients
- 2 thick pieces of whole wheat challah bread (found at Whole Foods)
- 1/4 cup almond milk
- 1 egg
- 1 ripe banana (mash half and reserve the other half for topping)
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- Coconut oil or ghee
Instructions
- Add the almond milk, egg, mashed banana, vanilla and cinnamon to a bowl. Dip the bread into the mixture and make sure it is well coated on both sides.
- Add 1 tsp coconut oil or ghee (depending on flavor preference) to a frying pan. Once the oil or ghee has melted, add both pieces of bread to the pan and cook for 3 minutes over medium heat on one side. Then flip and cook for another 2 – 3 minutes (until lightly browned). Transfer to a plate.
- Caramelize the reserved half of the banana by adding 1 tsp of coconut oil to a pan and chopping banana into small pieces and lightly frying them in the coconut oil. Sprinkle cinnamon on the caramelized bananas. Top the french toast with the caramelized bananas and optionally drizzle with some maple syrup. Enjoy!
