This is the most delicious vegan and gluten-free baked oatmeal that tastes like a twix!! My kids tried a real Twix for the first time on Halloween and are obsessed, so I thought this would be a fun breakfast for them (and obviously healthier than them eating Twix lol)!! It’s made with clean ingredients and is free of refined sugar!

Ingredients
OATMEAL:
- 1/2 cup oats
- 1 tbsp cacao powder (or cocoa powder)
- 1/2 mashed banana
- 1 tbsp maple syrup
- 1 cup almond milk
SHORTBREAD TOPPING:
- 4 tbsp almond flour
- 1 tbsp melted coconut oil
- 1 tbsp maple syrup
VEGAN SALTED CARAMEL SAUCE:
- 2 tbsp coconut oil
- 2 tbsp maple syrup
- 1 tbsp coconut sugar
- 3 tbsp creamy almond butter
- pinch of sea salt
Instructions
- Preheat oven to 350F.
- In a bowl mix together the oats, cacao powder, mashed banana, maple syrup & almond milk. Transfer mixture into a lightly greased ramekin. Place in the oven and bake for 25 min.
- While the oatmeal is baking make the shortbread topping by the almond flour, melted coconut oil & maple syrup. Bake in the oven on a parchment-lined mini tray next to the oatmeal for 10 min at 350F.
- Make the salted caramel by coming the coconut oil, maple syrup, coconut sugar, almond butter and salt in a small saucepan over low heat on the stove. Mix until well combined and set aside.
- Remove the oatmeal and shortbread topping from oven when they’re ready and crumble some of the shortbread topping on top followed by the salted caramel sauce. ENJOY!
