Since I’ll be hosting Thanksgiving at my house this year I’ve been brainstorming what dishes I’ll be making. I always try to keep it healthy, yet exciting for myself and my guests. I have known for a while that I want to make a homemade hummus appetizer served with crackers, but didn’t want to make traditional hummus.

I decided on beet hummus because the color is so pretty plus I get to sneak a vegetable into my hummus! Win-win! The beet hummus is simple to make and the ingredients are clean and minimal. The hummus is vegan, gluten-free and dairy free as well.

There is no other cracker that I rather serve my beet hummus with than Simple Mills Sprouted Seed Crackers! They have been one of my latest healthy snack-time obsessions. They’re made with very clean and nutrient-dense ingredients. They’re non-GMO and are free of grains, gluten, dairy, soy, corn and refined sugar. I love that Simple Mills products never use gums or emulsifiers. The crackers are high in ALA Omega-3s and are a good source of Vitamin E and Manganese. They’re also vegan and paleo friendly.

I love that the crackers are sprouted for optimal nutrition. The process of sprouting the seeds removes the seed’s outer layer that limits nutrient absorption. Sprouted seeds are also easier for your body to digest. I personally always opt for sprouted nuts and seeds when possible.

Simple Mills Sprouted Seed Crackers come in four different flavors: Original, Everything, Jalapeño, and garlic & herb. All flavors are equally delicious! I force myself to put the bag away after a few handfuls otherwise I can easily overindulge! They’re just sooooo damn GOOD! I’m also obsessed with the new hexagon shape of the crackers, which makes them less breakable 🙂 You can now find these crackers at Whole Foods.

For those of you who may have a nut allergy – it’s almost impossible to find a paleo cracker that doesn’t contain nuts. I find that almost all paleo crackers use almond flour, so the fact that these crackers are only made with seeds is perfect for anyone with a nut intolerance or allergy!

Beet Hummus

    Ingredients

    Scale
    •  1/3 cup olive oil
    • 5 small red beets (roasted)
    • 2 garlic cloves
    • 1 can of chickpeas (drained & rinsed)
    • 2 tbsp tahini 
    • 1 lemon (juiced)
    • salt and pepper to taste
    • ground pumpkin seeds + hemp seeds for topping

    Instructions

    1. Add all ingredients (except the toppings) in a food processor, and process until smooth, scraping down the sides if necessary. If the hummus is too thick add extra olive oil.
    2. Serve with Simple Mills Sprouted Seed Crackers and sprinkle with ground pumpkin seeds and hemp seeds.
