The Best Paleo Meatloaf (Toddler-Approved)!
A quick, easy and healthy paleo meatloaf made with clean ingredients. Perfect for leftovers PLUS it’s husband and toddler-approved!
Meatloaf is one of those comfort meals that I could easily have one my weekly dinner rotation. I’m so happy to say that this meal is husband-approved as well as toddler-approved. My entire family loved it!! To simplicity my life I’m trying to only make dinners that I know myself, my husband and both of my daughters will enjoy. Gone are the days of me cooking 2 or 3 different dinners!
One of my favorite parts of this meal is that I have leftovers so dinner is taken care of for two nights in a row for the entire family. You could also double or triple the recipe and make a few meatloafs so you can freeze them for a later date. Having kids I’m all about meals I can quickly reheat for those crazy chaotic nights where I just don’t have time to cook.
Traditional meatloaf is made with regular flour, but this meatloaf recipe is gluten-free and paleo as I used coconut flour in place of regular flour. You can check out the recipe for all of the other clean ingredients used.
Speaking of clean ingredients – I’m VERY selective when it comes to which meat I consume, and just as important what meat my kids consume. I always opt for grass-fed beef and pasture-raised meat. All meat should be free of antibiotics, growth hormones and GMOs.

Ingredients
- 1 lb grass-feed beef (I got mine from Grass Roots) – code LEAHSPLATE for $50 off your first box of $125 of more!
- 2 whole pasture-raised eggs
- 1 egg white
- 1 cup of BBQ sauce (I use an organic, low sugar sauce)
- 1/4 cup coconut flour
- Pinch of salt and pepper
- Avocado oil
Instructions
- Pre-heat oven to 350F.
- Generously spray bread loaf pan with avocado oil.
- In a large bowl mix eggs, egg whites, 1/2 of the BBQ sauce, coconut flour, salt and pepper.
- When all ingredients are completely mixed, hand mix ground beef in just enough so all ingredients are incorporated. Be careful not to over mix to reduce dryness.
- Put half of meat loaf mixture in loaf pan.
- Spread 1/4 cup of BBQ sauce on the first layer in the pan.
- Put the rest of the meat loaf mixture in the pan and spread remaining BBQ sauce on top layer of meat loaf mixture.
- Cover with foil and bake for 40 minutes.
- Uncover and bake for and additional 10 minutes.
- Broil on high for 5 minutes.
- Remove from oven, slice and enjoy!
