Vegan Ice Cream Bars with a Granola Crust
These easy-to-make, 3 ingredient vegan ice cream bars with a granola crust are the perfect healthy summer dessert!
These vegan ice cream granola bars are incredibly delicious!! They are so simple to make (I love any dessert that requires very minimal ingredients to make). Only working with 3 ingredients makes shopping and creating the recipe as easy as possible! Who else gets turned off by very long ingredient lists?!
The crust is made by simply blending together a bag of granola (I love this grain-free granola) with coconut oil. You then simply press the crust down into the pan, then cover with a pint of your favorite ice cream (make sure to let the ice cream defrost for a few minutes first). I am obsessed with Daily Harvest plant-based vegan ice cream. It’s made with the cleanest ingredients and is naturally sweetened. It’s difficult to find a truly healthy ice cream!! All of the ingredients in the ice cream and made from whole foods – no icky or weird ingredients.
Once the ice cream is spread over the top of the crust simply cover it and place it in the freezer for a few hours prior to slicing and enjoying!

Ingredients
- 1 bag of grain-free granola
- 3 tbsp coconut oil
- vegan ice cream
Instructions
- First make the crust by adding a bag of granola (I love this grain-free granola) with coconut oil. Process until it’s well combined. Next simply press the crust down into the bottom of a loaf pan.
- Cover the crust with a pint of your favorite ice cream (make sure to let the ice cream defrost for a few minutes first). I am obsessed with Daily Harvest plant-based vegan ice cream. Once the ice cream is spread over the top of the crust simply cover it and place it in the freezer for a few hours prior to slicing and enjoying!
