Homemade Healthy Peanut Butter Cups! (Dairy-Free & Gluten-Free)

As many of you may be aware I have a MAJOR sweet tooth! I always have fun creating healthier twists on some of my favorite treats! One of my all time favorite treats is a classic peanut butter cup! Seriously – is there anything yummier than a chocolate and peanut butter combo?!
This peanut butter cup recipe is vegan, dairy-free, gluten-free and grain-free. It’s also made with clean and minimal ingredients. There are only FOUR ingredients used for this recipe: dark chocolate (this brand is free of dairy, soy, and gluten and is also sweetened with just coconut sugar), coconut oil and peanut butter. If you want these sweeter you can mix the peanut butter with a little coconut sugar to sweeten it. These are the molds I used to make these cute little mini chocolate peanut butter cups!
To make the peanut butter cups, melted chocolate is placed on the bottom of mini muffin liners. Then it’s chilled to set, topped with the peanut butter filling, followed by more chocolate and chilled again.

Keep these stored in the freezer to enjoy them any time you’re having a sweet tooth. Just let them defrost for a few minutes on the counter first.

- Prep Time: 10 minutes
- Cook Time: 50 minutes
Ingredients
- 1 cup dark chocolate chips or 2 dark chocolate bars
- 1 tbsp coconut oil
- 1/2 cup peanut butter mixed with 2 tsp coconut sugar
Instructions
- Add the chocolate and coconut oil to a small saucepan and heat over low heat, stirring until fully melted.
- Pour the chocolate mixture into the molds (filling them up only 1/3 full).
- Place in the freezer for 20 minutes.
- Remove from the freezer and add the peanut butter mixed with coconut sugar on top, followed by the remaining chocolate mixture (filling the chocolate to the top of each mold).
- Place back in the freezer for at least 30 minutes, or until the chocolate has hardened.
- Keep stored in the fridge or freezer.
